l’Ordre des Canardiers
The Ordre des Canardiers was founded in 1986, with the aim of protecting French cultural heritage, and in particular the culinary art inherent in the preservation of a great regional dish : le Caneton à la rouennaise. This distinction concerns the Maîtres Canardiers : professionals who serve Caneton à la Rouennaise in their restaurant, using the original recipe for cooking duck which involves a Duck press, and the Gentilshommes or Dames Canardiers, gourmets who appreciate this special recipe and share the goals of the association.
